The hard moment is often not the forgetting but the writing down: you'd have to put the thought into words, can't find the word, get distracted – and it's gone. A photo skips that step. You tap the shutter once on the empty jar, the shelf, the note on the pinboard – and the thing is on the list without you having to describe it.
